A peeling knife is simply what it says on the tin; the perfect knife for peeling just about anything, including fruits and vegetables.

A small knife which typically has a blade of between 7cm and 11cm, the curved edge of this little knife is perfect for peeling and also has a place in traditional French gastronomy, where it is used to sculpt pieces of root vegetables into seven sided barrel shapes.

These knives have a straight edge with the back running down towards the tip and look a little like a small santoku knife.
